An ongoing joke with the boys in my family is that they are constantly munching on my baked goods and saying "this is so good!" For a while I let them think they were consuming products with eggs, milk, and yogurt. I always look over at them and starting to tell them all of the nutritious ingredients loaded inside of them, but every single time I am cut off with a simple, "I don't want to know what's in it...for all I know you put asparagus in the batter!" Little do they know that I love my veggies but I prefer sugar in my desserts:)
So me being the science and psychology geek that I am decided to try out a little bit of an experiment/mind game on the boys in my family. I made muffins about a week apart from each other, the first batch I made was not vegan(it pained me to make these, but I had a point to prove!) The muffins were eaten and enjoyed, and I was asked to make another batch sometime soon! So I did, but this time I completely veganized the recipe, but I didn't tell anyone about the change. These muffins were devoured that afternoon and the boys did not stop talking about how much they loved them!
So taste wise, my experiment concluded that the vegan muffins were a bigger hit, but I couldn't stop there. I then proceeded to inform them that the muffins they had consumed were 100% vegan. The looks I got were similar to if I had just told them that they were made of kale! It was quite humorous actually, and goes to show that vegan foods can satisfy your sweet tooth!
So here is the recipe for my favorite blueberry muffins...
"Vegan Blueberry Banana Applesauce Muffins"
1/2 cup of Earth Balance
1/4 cup of organic cane sugar
1/4 cup of organic brown sugar
2 flax eggs (1 flax egg= 1 tbsp of ground flax seed and 3 tbsp of water...let sit for 5 minutes then add to batter)
1/2 cup of natural apple sauce
1 banana mashed
1 tbsp of baking powder
1/2 tsp of salt
1/2 cup of blueberries
Set oven to 350 degrees. Combine all ingredients into a bowl. Cook for 15-20 minutes. Let muffins cool for approximately 10 minutes, then dip tops in melted Earth Balance "Butter" then directly into sugar and cinnamon mixture. Let cool and enjoy!
